Coconut balls with dark chocolate
Ingredients
Makes about 10 balls
· 1 cup finely grated coconut (unsweetened)
· 3 tbsp. coconut oil
· 3 tbsp. maple syrup (pure maple syrup or you can use bees or agave syrup)
· ½ tsp. vanilla extract
· 1 ½ cup dark chocolate chips
· sea salt
Instructions
1. Combine coconut, coconut oil, maple syrup, and vanilla extract in a blender or food processor. Mix until well combined into a thick "batter."
2. Use your hands to shape the coconut dough into bite-size balls. Place the balls on a piece of wax paper.
3. Melt the chocolate and use a spoon to lightly coat the balls with the melted chocolate over each coconut ball. Add enough to cover the entirety of the top and sides of each ball, but not so much preventing a puddle of chocolate from forming around the base.
4. Sprinkle each ball with a little sea salt, while the chocolate is still wet.
